I am still working my way through the pears from my friend Margit’s tree. Because we picked them green and I stored them in the back of our refrigerator in a paper bag they have been holding up nicely.

Two nights ago I wanted a light dinner. I had some arugula I needed to use. I had pears. I decided to make a salad. I washed and spun the arugula in the salad spinner. Then I went out to pick a ripe Meyer lemon from our tree. Returning to the cutting board, I squeezed both halves of the lemon into the bowl and then cored and sliced three greenish pears lengthwise, leaving the skins on. I tossed the pears with the lemon juice to prevent browning. Then I added a small splash of olive oil and tossed the arugula and pears again. Next I shelled some pistachios and grabbed a handful of dried cranberries.

I was thinking of shaving Parmesan or Pecorino Romano into the salad, but feta won out: I crumbled a small block of feta over the greens, fruit and nuts, then tasted to adjust seasoning. The only thing it needed was a bit of honey to bring out the sweetness. I drizzled a little on top and tossed the salad again.

This is a wonderful salad for the first few days of fall weather when it is sometimes warm enough to eat a salad for lunch or dinner. I served it again last night as a side salad with a dinner of turkey chili, cornbread and Gravenstein apple pie. The second time I made it I used roasted pistachio oil instead of olive oil. By the time I cooked and ate I didn’t have enough time to finish my painting, which is why this post is a day later than usual.

If you should live somewhere where pears and arugula are available in late November, this would make a lovely Thanksgiving Day salad. If not, make it and eat it while pears and arugula are to be had.

“Some of the time, not all the time” says the Dylan song “Hanging Out the Clothes.” That’s how I feel about cooking. Sometimes I love thinking about cooking, perusing cookbooks, thinking about flavors. Sometimes I am inspired by a particular ingredient from the Farmers’ Market down in Berkeley or a glut of foraged blackberries. Sometimes I just want to put the closest thing in my mouth and be done with it.

There is a special pleasure in cooking for someone when you want to please them. Our most recent foray to Canned Foods Grocery Outlet fetched us some wild caught salmon from Washington State. Standing over the freezer case, eying the fish, I ask Mom, “Does Bryan eat salmon?”

“I think so,” she says. “Does Johnny eat salmon?”

It is rare for Mom to bring up Johnny in conversation. He’s only been over to the house in the past three weeks: although I’ve known him much longer than that, he never had reason to come up here before last month.

“I don’t know,”I said. “I’ll ask him when I see him.” In the meantime we bought the salmon filet, enough to feed at least four people.

Johnny and I schedule our visits in advance. We live a good distance away from one another and public transit schedules are not conducive to spontaneous trips to see one another, so, instead of dropping in on each other all of the time we schedule visits and try to spend a significant amount of time together when we get together.

We bought the salmon on Tuesday and Johnny was coming over on Thursday night. When he told me he liked salmon, I made a dinner plan: I would make the pear tart tatin that he once wanted to elope with (He’s mine, pear tart!), microwave some fresh green beans, bake some red potatoes and cook the salmon in foil topped with seasonal vegetables: cherry tomatoes, orange bell peppers, kalamata olives, basil, a little feta — basically a Greek salad without cucumber thrown on top of the fish. Everything except the green beans could cook in the same oven and, with a little prep work I could have an easy dinner that was festive and delicious.

In the morning I made pie crust for the tart and put it to chill. In the afternoon I took the salmon out to thaw, laid it on foil on baking sheet and oiled the skin-side with a little olive oil. Then I went to work on the pears, peeling, coring, slicing, putting them to soak in a little dark rum, sprinkling ground cardamom over them. I made the caramel in a cast iron skillet, arranged the pears on top, rolled out the top crust. I preheated the oven, adding a handful of potatoes on the side. Then I snapped beans and cut up half a basket of red cherry tomatoes, and a large orange bell pepper. I tore up a few basil leaves, plucked a handful of pitted olives from a jar, diced a small cube of feta and I was ready to go, scattering all that on top of the salmon. The minute Johnny arrived I put the tart and the salmon in the hot oven and told him we had a half hour to ourselves before I had to mess with food again.

I can’t remember what we did for that half hour. He might. He set table for me in the dining room because the breakfast room was a mess and I did not want to excavate the table. I had him test the fish a few times because I don’t cook salmon often. All told, we cooked the fish for perhaps 40 minutes in a 400 degree oven. Brother Bryan arrived home just as it came out and we all sat down to eat.

Johnny and I liked the salmon so much that I scrambled the leftovers for breakfast with eggs and we ate them with the last slices of the pear tart tatin — have to get rid of that stuff quickly since Johnny has threatened to run off with it.

Yes, I am still here (I haven’t decamped for France again), but I thought you might enjoy a special tomato season treat, a guest post from my friend Deborah Sandler.

Tomatoes are finally in season!  I yearn for them during the winter, and sometimes am seduced into buying hothouse tomatoes that look lovely but do not have the texture or zing of the real thing.  When you bite into a tomato that has been locally grown, recently picked, and never refrigerated, the flavor is huge and unmistakeable.  When I was growing up on the East Coast, tomatoes came wrapped in plastic, colored a sickly pink, four to a package, all exactly the same size and shape, firm and tasteless.  I lived in the suburbs, and didn’t know anyone who was growing tomatoes, so it was quite rare that I got to taste a real tomato.  That changed once I moved to California.  Many of the restaurants featured amazing tomatoes in their salads, and friends actually grew some in their yards.  I had no idea a tomato could look, smell or taste like this!  In recent years, heirloom tomatoes have appeared all over the place, stunning in their profusion of shapes, colors and flavors.  Their names are poetic and whimsical – here are just a few examples from one web site that sells seeds for them, and from my  local Farmer’s Markets:  Arkansas Traveler, Banana Legs, Bloody Butcher (ew!), Cherokee Purple, Black Russian, Dingwall Scotty, Green Zebra (and yes, these have stripes), Halfmoon China, Hank (hey, that’s my dog’s name!), Jersey Devil, Berkeley Tie-Die, Brandywine, Mortgage Lifter, Mr. Stripey, Nebraska Wedding, Yellow Pear, and Stump of the World.

I live in Contra Costa County in the San Francisco Bay Area, about 30-45 minutes inland from the ocean and from San Francisco.  For those not in California, that means that the climate here is far different from that in San Francisco.  Where the City might be 62 degrees and foggy on a summer afternoon, here it may be over 100 degrees and sunny.  We get some of the San Francisco fog, but not much.  The down side is that our winters are colder, foggier, and danker than those in San Francisco.  We are only an hour from the Central Valley, which runs down through the center of the state, and where much of the nation’s produce is grown.  Even closer is Brentwood, a major agricultural area just to the east of us, that features plenty of U-Pick farms and orchards, as well as farm stands.  Because our local weather is so warm, plenty of people around here grow their own produce, and some even sell at the local Farmer’s Markets.  Here is a partial but by no means exhaustive list of Farmer’s Markets within 15-30 minutes of my house:  Martinez Sunday morning (I think this is now year-round), Martinez Thursday mornings, Concord Tuesday afternoons (year round), Concord Thursday evenings, Pleasant Hill, Lafayette, Moraga, Danville, Orinda, Walnut Creek Saturdays at The Shadelands and Sundays on Locust Street (more on these below), Martinez at the Contra Costa County Regional Medical Center, Walnut Creek Kaiser, Concord High School, and the list goes on.

My favorites are the Walnut Creek Saturday morning market at The Shadelands, and the Walnut Creek Sunday morning market on Locust Street.  Both are very large, with over 40 vendors,  and both are year-round.  The Saturday market is only a few years old but already bustling with happy patrons.  The Sunday market has been there over 20 years, and most of that time I’ve been there.  The vendors there have watched my kids grow up, and know me well as one of their regulars.  At The Shadelands, my favorite tomato vendor is Swank Farms, which has several tables strewn with all sorts of heirloom tomatoes every week.  At the Sunday market, I like Roseland Farms, where the seller has numerous flat boxes of heirlooms sorted by color.  He also is one of the very few vendors that sells San Marzano tomatoes, one of the world’s best cooking tomatoes.  These last weeks sitting out on the table, cook into very flavorful sauces and soups, or can be sliced into salads as firm yet flavorful dependable little oblong beauties.  Roseland Farms also has a big pile of cherry tomatoes of all kinds, and you can grab them by the handful or pick them out one by one.  The Shadelands market had a map with push pins, showing the location of each vendor, and how far away their farm is from the market site.  The average distance they come is only 89 miles.  The average distance food travels to our supermarkets is 1,500 miles.  The map had a sign on it reading, “Choose the food less traveled!”

Here is one of my favorite things to do with tomatoes.  This is my somewhat famous tomato platter.  Amounts are approximate.  I made this up, and it doesn’t have official amounts of anything.  Mess around with this as much as you want, and change it to your taste. The secret is the freshness of the ingredients.  And do not ever refrigerate tomatoes – it destroys their flavor!  Slice several heirloom tomatoes (as many colors as possible) onto a large platter in several layers.  You can make patterns of color or just do it randomly.  Chop up a handful or two of feta cheese and sprinkle that over the tomatoes.  Then sprinkle a generous handful or two of olives over that.  Lately I use mixed Greek olives from Whole Foods, and I recommend you not use olives from a jar – get fresh ones from an olive bar if you can.  If you have fresh heirloom cherry tomatoes in several varieties, sprinkle a handful of those over the top. Then chop up a generous handful or two of fresh basil leaves and sprinkle that over the top and around the platter.  The vinaigrette I use is homemade, and is quite tart, so you may want to try it separately before using it here, to adjust for taste if you want. This reverses the usual proportions in a vinaigrette, and has 2 parts vinegar to 1 part oil.  1-1/2 T best quality olive oil, 3 T red or white wine vinegar, 10-15 shakes of salt, 10-15 grinds of fresh ground pepper or 3 or 4 shakes of coarse ground black pepper, 2 or 3 shakes of granulated garlic, 2 or 3 shakes of dried mustard. Mix thoroughly and pour over the tomato platter, serve immediately.

“Spring green” is a common phrase and color name. The spring in California is rich with greens: before we get to the reds, blues and yellows of summer we have pea green, asparagus green, artichoke green. And in the farm box we have beet greens, Swiss chard, kale, green garlic, spring onions, lettuce,  bok choy and peas. It is little wonder I was drinking my greens recently, shoving some spinach into a smoothie to make way for new rounds of greens.

I have made pizza for many years and somehow never made the leap to calzones. The dough is the same, the famous Cheese Bread sourdough recipe made with a cupful of whole wheat flour. The technique for shaping calzones is the same: you begin with eight small disks instead of three larger ones and go through the dimpling and pulling process.

I might have gone another few years without making calzones, except that Betsy’s recipe for calzones caught my eye and lingered in my imagination. Betsy made hers with fresh kale. I made mine with leftover cooked chard. I followed Betsy’s guidelines for the cup of feta and the 1/4 cup of dry cheese, but I used pecorino Romano where she used Parmesan.

Most of you know the drill for sourdough by now: if you want sourdough pizza, bread, waffles or biscuits you have to make up a sourdough starter. You need to feed it occasionally, but if you use it once a week or more it doesn’t take much care and feeding. I fed my starter yesterday morning with a half cup of water and a half cup of unbleached flour, shook it a few times and left it out on the counter. Come afternoon I came back and made pizza dough with a half cup of starter, 2 and 1/4 cups flour, 1 cup whole wheat flour and a generous teaspoon of kosher salt. Read the gory details here.

This morning I took my pizza dough out of the fridge at eight. At 10:22 I removed its dish towel, formed the dough into eight small rounds, floured the damp towel and let the dough sit while I made filling. I also put my pizza stone in the oven and cranked the heat up to 450, deploying three racks: one for the pizza stone, two for the trays of calzones.

First step: dump cooked chard from frying pan into pizza dough bowl (Why do more dishes than you have to?). Heat same frying pan over medium heat while you slice the white of a small leek and the shoots of some green garlic, wipe 3/4 of a pound of mushrooms with a clean damp cloth and slice them. Add olive oil to the skillet and saute your leeks and garlic while you continue to slice mushrooms. Add leeks and garlic to chard. Saute mushrooms in two batches, adding oil as necessary. While you have the oil out, lightly oil two pizza pans. Add sauteed mushrooms to chard, leeks and garlic. Crumble 1 cup of feta into the vegetables. Use microplane to grate 1/4 cup dry cheese over top. Grate some nutmeg to taste and add a sprinkle of red pepper flakes.

At this point, the faint-hearted or fanatically germ-phobic might give this mixture a stir, but I like to work with my hands, so I plunged my hands into the bowl and mixed. Then I washed and dried my hands before turning to the dough.

Using the dimpling and stretching techniques detailed in the pizza post I made my eight disks into eight five-inch circles, one at a time, so that I could fill and fold each calzone before making the next one. Again, I used my hands to scoop filling onto half of each calzone, but the fastidious may use a spoon and the precise may use a scoop or measuring cup, but you will need to use your hands to fold the crust over the filling and seal the edges.

Once your calzones are filled, folded and sealed, give each one slash with a sharp knife to allow steam to escape. I use a stainless steel steak knife. If you keep a clean razor in your kitchen that will work, too.

I put one tray of calzones in while I filled the others. When the second batch was filled and folded I switched the first tray to a higher rack and started the second one on the middle rack. In ten minutes, I switched them again. We like things toasty and brown so the first tray was probably in the oven about thirty minutes. When I took the first tray out I turned off the oven and let the second tray finish cooking from the residual heat of the oven and the pizza stone.

By the way, I did not make the dough green. It is not St. Patrick’s Day. If you eat your spring greens you will see plenty of that color.

Food Notes: Betsy serves her calzones with marinara, which I’m sure is good. We ate ours plain to get maximum crust effects. Variations are legion: you can use any cheese you like, although the combination of a creamy one and a dry one produces a nice texture and flavor without a grease factor. If I could only have two cheeses for cooking they would be feta and Parmesan so Betsy’s choice worked for me, but you could use goat cheese and dry Jack or ricotta and Asiago. If you won’t eat or drink your greens, stick to mushrooms or pile in some meat. I badly wanted to add some roasted red peppers, but I didn’t want the mixture to be too wet, and I would have added sun-dried tomatoes if I hadn’t eaten them all by March. The same dough that makes crisp thin crust pizza transforms into a breadier dough you can hold in your hand when stuffed in this manner. Enjoy.

This week I got a big bunch of fresh basil in the farm box. Fresh basil in October? I’ll take it. I used some of it to make a quick pesto to eat on Portobello mushroom “burgers” last night. I used the rest to make my favorite quick pasta dish: pasta with broccoli, feta and basil.

This is almost a non-recipe.

1) You put your pasta water on to boil

2) You get out a box of pasta — I like short pastas with this: farfalle, fusilli  or penne. I use half a pound for two people because I like leftovers and because when we eat this pasta we eat it as a one-bowl meal.

3) While the water heats and the pasta cooks, wash and chop your broccoli into bite-sized pieces. How much broccoli? I can’t tell you that. How much do you have? How much do you like broccoli?

4) Crumble some feta cheese into a large serving bowl or two individual pasta bowls (You can make this for one, too — just use less of everything). I’m going to say four ounces of feta for two people, but if you want to use more, use more. The more cheese, the better it is, really.

5) Squeeze the juice of one or two lemons over your cheese.

6) Grind some black pepper over  the cheese if you like pepper.

7) Do a quick chiffonade of basil leaves into the cheese.

8) Throw your chopped broccoli into the pasta water in the last minute of the pasta’s cooking. Cook one minute only.

9) Drain pasta and broccoli

10) Toss with feta and basil mixture, or put in individual bowls and stir like mad with a fork to distribute cheese. The cheese melts a little on the warm pasta, releasing the perfume of the basil.

Food Notes: This is best to eat in late spring and early fall, whenever you have the intersection of fresh basil and broccoli and lemons, but I make it in deep winter, too, substituting dried oregano and red wine vinegar for the basil and lemons. It’s good with roasted red peppers or bits of sun-dried tomatoes added to it, too, which add color contrast and winter vitamins. I make this pasta with fresh green beans if I don’t have broccoli — that’s good, but the broccoli version is better. What you don’t need is any salt or olive oil: feta is plenty salty on its own and provides enough fat. Keep it simple.

This is really good made with whole wheat pasta, too, which I buy whenever I find it on sale.

When I saw the list of vegetables from Riverdog Farm today I knew what I would be cooking soon: it is what I cook when zucchini first swings into season, along with corn and the first tomatoes — pancakes made of grated zucchini and fresh corn, bound with egg and a little flour, seasoned with fresh herbs, fried in butter and olive oil and topped with halved cherry tomatoes and a spoonful of sour cream. Can you say summer? Even late summer, as it turns out., or early fall. The seasons are wacko in California this year, with long spring rains and chilly weather, so all of our crops are later than usual.

I first saw a recipe like this in Mollie Katzen’s Moosewood cookbook. As a non-lover of zucchini, I immediately saw the camouflage possibilities (My other go-to zucchini recipe is gingerbread muffins with grated zucchini). The first time I made it, I made it by the book. The next time I added fresh corn kernels and began topping it with tomatoes and sour cream, I love feta cheese — it is one of the cheeses I prefer to keep on hand, along with Parmesan, extra sharp cheddar and Gorgonzola — if I could only have four cheeses, those would be the four.

Why don’t I like zucchini? Does anybody care? I find the skin is often bitter and the flesh either bitter or insipid. I’m always disappointed when some Chinese restaurant fills their kung pau chicken with zucchini. I grew up eating zucchini baked in tomato sauce and topped with cheese and didn’t like that much either, but I am happy to make these pancakes whenever zucchini appears in the veggie box.

Here goes:

Zucchini-Feta Pancakes with Fresh Corn and Cherry Tomatoes

Grate 4 cups of zucchini. Salt it lightly and leave to drain in a colander for fifteen minutes.

While zucchini drains, separate 4 eggs, yolks into large bowl, whites into a small one.

Beat the egg whites until opaque and fluffy.

Add to egg yolks:

1 cup crumbled feta cheese (You can buy a block and crumble it with a fork or your fingers)

1/3 cup whole wheat pastry flour

chopped fresh herbs to taste — I like mint and dill. Basil is also good, or chives if you like an onion-y presence.

kernels cut from 2 or 3 ears of fresh corn.

Fold in reserved egg whites.

Heat a skillet over medium-low heat. Fry cakes in a mixture of butter and olive oil (I usually scoop 1/4 to 1/3 cup of batter out with a measuring cup for each pancake).

Serve with halved fresh cherry tomatoes and a spoonful of sour cream or yogurt, or top with applesauce for a latke nouveau.

Notes: I often make just half a recipe, using two eggs and two cups of zucchini. And you don’t have to have zucchini — you can make this with crookneck squash, patty pan, or whatever summer squash comes your way, including mixtures of varieties.

If you don’t like feta, improvise with some soft cheese that you do like.

I haven’t tried this with grated winter squash or sweet potatoes yet, but it’s only a matter of time: you could even use summer and winter squash together as their seasons cross if you like both of them. And, of course, you can grate other things into them, but this is the way I like them.

One of my friends wrote to me yesterday and asked me to address the issue of cooking and eating well when you are a household of one. I live in a household of two and I usually cook for both of us, but I used to live alone and cook for myself.

What makes you happy depends on your tastes: I do not mind eating leftovers — if I make something yummy I will want to eat it again and again. Some people want to eat different things everyday. If you are a person who craves freshness and innovation, some dishes are made for you. It is easy to prepare an individual salad, a bowl of pasta, an omelet, a plate of scrambled eggs, a sandwich, or a quesadilla. You can vary the ingredients by choosing the best of what you like that is in season: right now is a good time to put corn in quesadillas, zucchini in omelets, cucumbers in sandwiches and salads and peppers and tomatoes in everything.

In Northern California it is ideal to make Greek salad while tomatoes, cucumbers and peppers are in season. You’ll need at least one tomato, cuke and red bell pepper, more if you want a larger salad. Other than that, all you need is feta cheese, a jar of kalamata olives and the ingredients to make a vinaigrette: olive oil, lemon juice, red wine vinegar, garlic, dry mustard, salt and pepper.

I make my simplest vinaigrette by drizzling some olive oil over my salad ingredients. I don’t measure it — I just drip some on and toss the greens or vegetables. Then I take a small measuring cup out. I add to it one clove of crushed garlic, a large pinch of hot mustard, ground black pepper, a dash of salt and a tablespoon or two of red wine vinegar. I stir that up and dump it on my salad. Toss again. Then I taste it by picking out a leaf of lettuce or a piece of cucumber. Can I taste every ingredient? If you go easy on the salt and vinegar in the first pass, you can always add more. I like quite vinegary dressing (My friend Valentine says salad dressing gets sharper as you move from East Coast to West Coast and I was born here in the west).

When I make vinaigrette for Greek salad, I like to add the juice of a lemon, especially a home-grown Meyer lemon from the front yard. I add it just after I toss the salad with oil. I also keep the salt to a few grains because both kalamatas and feta are salty.

Food notes: You can use any kind of cucumber in Greek salad. I like Armenian cucumbers best because you don’t need to peel them, but I have made the salad with lemon cukes, English cukes, pickling cucumbers and the standard supermarket variety. You can use bell pepper of any color, or gypsy peppers. You can use full-sized tomatoes, cherry tomatoes, or grape tomatoes — I use what I have, but my favorites are little orange Sun Gold cherry tomatoes right off the vine. I like sheep’s milk feta better than goat’s milk feta, and I prefer French or Greek feta to others when I can get them (but a lot of my feta comes from the cheese selection at Grocery Outlet). Do use kalamata olives — canned black olives will not deliver the punch here. Leftover kalamatas keep well in the refrigerator. I like the clean taste of kosher salt, but you can use what you like.

Variations: In full summer, I sometimes add watermelon chunks to Greek salad. It’s not for everyone. If you are cautious, put a bowl of watermelon chunks on the side, transfer just one piece to your salad plate and see what you think.  If it doesn’t work for you, save the watermelon for dessert. Want more spice? Add a pinch of crushed red pepper flakes to your salad and toss well.

Greek Salad for One

Slice or chop one cucumber, one red bell pepper, and one tomato or a handful of halved cherry tomatoes into your salad bowl. Crumble in feta cheese to taste. Add some pitted kalamata olives (if you halve them, they will go further). Drizzle salad with olive oil and toss. Squeeze half of one Meyer lemon over salad. Toss again.

In the bowl of a measuring cup, make a vinaigrette of one small smashed clove of garlic, a Tbsp or two of red wine vinegar, a few grains of salt, a pinch of hot mustard. Stir together. Grind in some black pepper. Toss it into your salad. Taste and adjust.

It’s wonderful to eat this with a sourdough baguette to soak up the dressing — I “clean” my salad bowl with bread when I am done. If there are any leftovers (there shouldn’t be), they’ll be good for lunch tomorrow.
